Coconut carrot cake balls

Serves 30
Ingredients
2 carrots peeled and roughly chopped
1.5 cups raw walnuts
1 tsp vanilla extract
1 ripe banana
1 cup organic oatmeal
1 tsp sea salt
½ tsp cinnamon
10 medjool dates (pits removed)
¾ cup shredded coconut
¼ cup shredded coconut (reserved for rolling the ball)
Instructions
- Put all the ingredients in the food processor. Blend all your ingredients together until a thick paste forms.
- Roll into balls, roll in shredded coconut and eat them! They taste good either at room temperature or cold from the fridge as well, whichever you prefer.
