Easy buckwheat porridge

Ingredients
½ cup buckwheat groats
1 cup unsweetened rice milk
1 cup water
1 tbsp maple syrup
1 tsp vanilla
Cinnamon to taste
Apple (thinly sliced)
Instructions
- In a bowl, mix buckwheat groats, rice milk, maple syrup, vanilla extract together and put it in the fridge to soak overnight. If you are rushed for time, grind buckwheat into powder then you can cook immediately.
- The next morning, heat the overnight buckwheat mixture with a cup of water and cook for 10 minutes or longer pending on how soft you like it. During this time, add slices of apple to cook together as well.
- Once cooked, turn off heat and stir in cinnamon. Enjoy hot or cold.
