Easy Homemade Nut Milk

Ingredients

1 cup soaked nuts (almond or cashew or walnut) **

3 cup filtered water

3 medjool dates (pitted)

1 tsp vanilla extract

 

Instructions

  1. Soaked nuts (I prefer raw, organic nuts) overnight in cold water. Drain nuts, throw away the water. If unable to soak overnight, at least soak for 5 hours.
  2. Pour soaked nuts, filtered water, medjool dates and vanilla extract in a high speed blender for 2-3 minutes or until completely blended.
  3. Use a fine strainer or cheese cloth or nut bag, pour nut milk into strainer to strain the nut mixture. I sometimes don’t strain in but expect to have grainy texture.
  4. Store in the fridge to be used for 3 days.

 

Leftover nut meal

The leftover nut meals can be added to smoothies, muffin or oatmeal. You can dry the nut meal by spreading it out on a baking sheet and bake it in a low oven until completely dry. Dry nut meals can be kept frozen for many months.
