Easy Homemade Nut Milk

Ingredients
1 cup soaked nuts (almond or cashew or walnut) **
3 cup filtered water
3 medjool dates (pitted)
1 tsp vanilla extract
Instructions
- Soaked nuts (I prefer raw, organic nuts) overnight in cold water. Drain nuts, throw away the water. If unable to soak overnight, at least soak for 5 hours.
- Pour soaked nuts, filtered water, medjool dates and vanilla extract in a high speed blender for 2-3 minutes or until completely blended.
- Use a fine strainer or cheese cloth or nut bag, pour nut milk into strainer to strain the nut mixture. I sometimes don’t strain in but expect to have grainy texture.
- Store in the fridge to be used for 3 days.
Leftover nut meal
The leftover nut meals can be added to smoothies, muffin or oatmeal. You can dry the nut meal by spreading it out on a baking sheet and bake it in a low oven until completely dry. Dry nut meals can be kept frozen for many months.
